They can also be called: Itrana, Aitanella, Cicerone, Gaetana, Gitana, Olivacore, Reitana e Velletrana. This olive is the world antagonist of Kalamata olives, no gourmet connoisseur could tell which one is the best.
They have a dark wine-red black color, scent of old must with lacto-acetic hints, slightly bitter and savory taste. Particularly suitable for the preparation in the kitchen of typical dishes with an unmistakable taste, which makes it unique.
