I MORI - THE PANETTONE OF THE SICILIAN MASTERS
The artisan panettone ''I MORI'' are born from the Sicilian confectionery art and from the skilled hands of the best pastry chefs of the island. The accuracy of the processing, on which the goodness of these products is based, is present from the early stages of production, during which the ingredients processed for hours reach the ideal oxygenation of the first leavened product. The subsequent stages of realization, scrupulous and complex, require an additional dough, two long cycles of natural leavening, hand processing and pirlatura; this is followed by cooking at a controlled temperature of the core and a last rest cycle in which the Panettone remains upside down so that it maintains its softness. The filling is done by hand, with creams obtained from typical ingredients and selected of the territory.
