The Yellowfin Tuna Ventresca (with yellow fins) are obtained from the ventresca muscle bundles, the finest part of the tuna, and are hand-worked into fillets.
For 100 years we have been choosing the finest quality tuna and we process it completely in Italy, in the Maierato (VV) plant, in all its phases, following a tradition that is centuries old in our Calabria.
After steaming the tuna, we choose the best fillets one by one and put them in jars again by hand, following strict rules of hygiene and food safety. Then we season them for a long time, to guarantee you that intense and inimitable flavor.
